Porridge is perfect during the chilly mornings and very few breakfasts can offer such instant feeling of comfort as warm, thick and creamy oats. The exact texture is a very personal thing and the same goes for the decision of 'milk vs. water'.

Traditionally made with water but sometimes made with hot milk too, especially if you like it creamy. Stirring is essential if you want the porridge to be truly creamy.

Just a few tips before you get started: Porridge needs cooking for a little while so the starch will be fully cooked. It should be served piping hot and in pre-warmed bowls (if you care).

Buy good quality organic oats and do not forget the salt. It adds depth to the porridge and will bring out the sweetness of any toppings.

And now – porridge five different ways!

Here is the classic recipe and four delicious variations.

Classic recipe for 4 people:
160 g rolled oats
600 ml milk (or water, but if you like it creamy go for milk)
sea salt

1. Place the oats and liquid in a large pan over a medium heat.
2. Add a tiny pinch of salt and stir with a wooden spoon.
3. Once thickening has begun, lower the heat so as not to burn the porridge.
4. Let simmer for approx. 7 minutes, stirring as often as you can to give you a smooth creamy porridge.
If it is to thick add a splash more milk or water until you’ve got the consistency you like.
